The Wisconsin State Fair will bring a large slate of new food options to West Allis this summer, giving visitors fresh choices when the event runs Thursday, Aug. 6, through Sunday, Aug. 16. Fair organizers say more than 80 new items will be added to the lineup for 2026.
What changes for visitors
Fairgoers can expect a mix of familiar flavors in novel forms and some intentionally unusual offerings. Many of the additions combine Wisconsin staples — like cheese curds and bratwurst — with international or novelty influences aimed at creating shareable, Instagram-friendly dishes.
Among the new items listed by fair officials are:
- Bloody Mary Mac Daddy — Creamy mac and cheese blended with Bloody Mary mix, topped with relish, chopped cheese and tomato powder, offered at Pop's Paradise.
- Bugged Out Frozen Cheesecake On-A-Stick — A chocolate-dipped frozen cheesecake with a caramel center and edible insects, available from All Things Jerky.
- Caramel Apple Cheese Curd Tacos — Sliced Granny Smith apples with fried white cheddar cheese curds, caramel sauce and crushed graham crackers, from Richie's Cheese Curd Tacos.
- Cheddar Garlic Longanisa Lumpia with Banana Ketchup — A deep-fried lumpia filled with Filipino-style sausage and Door County cheese curds, served with banana ketchup at Lumpia City.
- Chimi-Brat-Changa — Bunzel's bratwurst with refried beans and cheddar wrapped in a tortilla and deep-fried at Leff's Miller Lite Sports Bar & Grill.
Local flavors, novelty drinks and handheld trends
The list also includes beverage and snack hybrids designed for quick consumption on the fairgrounds, such as the Circus Peanut Spritz and the Hot Honey Chicken Lemonade, both of which layer sweet and savory elements. Vendors are experimenting with handheld formats — tacos, sliders and sticks — that make it easier to sample several items in one visit.
