Grazia Craft Kitchen & Cocktails announced plans to open a Fort Collins location in the heart of Old Town, continuing the brand’s focus on scratch-made Italian food and a strong craft-cocktail program. The restaurant is planned for 160 W. Mountain Avenue, inside the historic William S. Hill building, and the owner said the team has submitted its plans to the city and is aiming for an early 2027 launch.
Location and timeline
Owner Adrian Hembree told media the group recently filed permit plans with the City of Fort Collins and is targeting February 1, 2027 for opening, pending municipal approvals. The project will occupy a prominent downtown address on Mountain Avenue, a block that sees steady foot traffic from residents and visitors.
“We recently just submitted to the city, and I would like to be open and operating by February 1,”
Hembree said the Fort Collins site will build on Grazia’s Texas roots while adapting to local tastes. He described the concept as from-scratch Italian cooking paired with a dedicated craft cocktail program and said the team has spent several years getting to know the Fort Collins community.
What diners can expect
According to the restaurant’s public materials, offerings will blend Italian culinary traditions with Gulf Coast influences and a hospitality approach shaped in Texas. Guests can expect scratch-made pastas, other Italian favorites and a beverage program that emphasizes handcrafted cocktails.

- Setting: Historic William S. Hill building in Old Town
Local context and potential impacts
Downtown Fort Collins continues to be a focal point for new and relocated restaurants, which contributes to the area’s economic activity and walkability. A new full-service concept at 160 W. Mountain Avenue will add to Old Town’s evening offerings and could affect nearby businesses by increasing foot traffic and demand for parking and delivery services. Hembree said the choice to expand to Fort Collins followed time spent in the community.
“Over the last five years, we’ve just fallen in love with the town, the community and the downtown district,”
Before opening, Grazia will need to complete the city’s review and permitting processes. Residents interested in the project can watch public planning notices for updates on approvals and any required inspections or hearings.
